The simple concept stems from the chef’s desire to serve fresh produce and seasonal cuisine based on a pure and noble product: meat. So we select cuts of meat from the finest races with our butchers and our chef, Maxime Nercisse. This means we can serve Charolaise, Salers, Limousine and Aubrac meats matured in our ageing room every week. But also exceptional meats like Wagyu, bred and produced in Foissiat (Ain) by Kamakle.
French know-how is central to our beliefs. We believe that we should showcase local producers. Our commitment: only working with French products, raised according to strict local tradition to guarantee exceptional quality meat.
The wine list aims to highlight the beauty of our region and pay tribute to winemakers who respect both tradition and the environment.
